We're still in mental health awareness month and we understand that there are a number of ways that we can use to support our mental well-being. One of these methods could be making yourself a yummy meal and enjoying it outside in the sun. This apple berry crumble is one of my favorites and it is very versatile. You can have it for breakfast with some yogurt or chia seed pudding. You can also have it for dessert with some ice-cream. You can use only berries, or pear or even peaches fo the filling. Recipe
Ingredients
2 Cups of apple slices
Handful of mixed berries (blueberries and raspberries)
1 tbsp Vanilla
1 tsp Cinnamon
1/2 tbsp Nutmeg
1/2 cup chilled Butter
1 cup Brown Sugar
1 1/2 cup Flour
1/2 tbsp lemon juice
Preparation
For the apple berry filling:
- Preheat oven to 400 degrees Fahrenheit. Butter your baking dish and set aside.
- In a bowl, combine 1/3 cup of sugar (from the 1 cup), 1 tbsp of vanilla, 1/2 tbsp lemon juice, 1 tbsp of flour (from the 1 cup) and 1 tsp of cinnamon. Add the apple slices and mix well to coat evenly.
- Put the apple mixture in the baking dish and bake for 20mins or until apples are tender.
For the crumble topping:
- Combine the rest of the flour, sugar, and nutmeg in a clean bowl.
- Cut butter into cubes and use a fork to cut butter into the flour mixture. You can also use your clean hands to combine the butter into the flour by rubbing it between your fingers.
- Remove the apple mixture from the oven. Add the berries.
- Sprinkle the crumble over the apple berry mixture. Make sure it's completely covered.
- Return to the oven for 25mins or until the crumble is golden brown.
- Serve with a scoop of ice-cream or yogurt and enjoy. Its delicious both warm and cold.
