This delectable jam is a sure tastebud pleaser. Blood oranges are currently in season so the flavor is quite exquisite. This recipe is quick and easy and follows three major ingredients with a few optional ones!
Ingredients
5-6 Blood Oranges
1 1/2 tbsp Honey
1/4 cup Chia Seeds
1 cup Water
1 tsp Vanilla (optional)
Cinnamon (optional)
Directions
Wash and cut each orange into two and then cut each half into two.
Use a knife to cut out the pits of the orange.
Remove the seeds as best as you can.
Add the pits to a pot with 1 1/2 tbsp of honey.
Pour in a cup of water and bring to a boil.
Once the mixture starts bubbling turn down the heat and let it simmer. Add some orange zest by gratin the orange skin directly into the pot (~1tsp).
Add in cinnamon and 1tsp of vanilla and stir for 1-2 minutes.
Transfer the mixture to a blender and blend until smooth.
Strain the mixture and save the pulp (freeze the pulp for later use).
Let the liquid cool for a few minutes.
Add 1/4 cup of chia seeds to a jar and pour in the cooled liquid. (Makes 2 jars).
Mix to thoroughly distribute the chia seeds into the jam.
Store in the fridge over nigh to set.
Enjoy on toast with nut butter of choice or add to your favorite yogurt parfait.
