My favorite breakfast from my childhood growing up in Jamaica was peanut porridge. It was a blend of raw peanuts with warm spices like cinnamon and nutmeg, milk and most importantly, love :). Since moving to the states, I can't tell you the last time I had peanut porridge. Unfortunately, I haven't been able to recreate it since I don't have access to the raw peanuts (I probably haven't looked hard enough) that we usually use in the recipe. Anyway, a few Sundays ago I had the genius idea of using the pistachios I had in my pantry to make porridge. It was the best decision! It came out perfectly creamy and nutty and oh so comforting! It is also super simple to make. So, in an effort to share the love, here is the recipe :)
Recipe
Ingredients
1/2 cup Oats
1 cup Pistachios
1/4 cup Brown Sugar
1 tbsp Hemp Seeds
1/2 cup Coconut milk
1 tsp Nutmeg
1 tsp Cardamom
1tsp All Spice
Vanilla to taste
1/2 cup water
1tbsp flour
Directions
Blend the oats, hemp seeds and chia seeds into a fine powder.
Add the powder to a pot on medium heat, add water and bring to a gentle boil.
Once boiling, add the coconut milk, brown sugar and spices.
Stir to create a uniform mixture.
Turn the heat to low and whisk in a tbsp of flour to thicken the porridge. Be sure to whisk vigorously to prevent the flour from clumping.
Let the porridge cook down for another minute or until you get a thick and creamy consistency.
Pour the porridge into a bowl and top with a few pistachios and dried cranberries. Enjoy!
