Crunchy Cabbage Salad


One of my favorite ways to ensure that I include enough vegetables on my plate each week is to make a giant salad during my meal prep day to enjoy as a meal or as a side to other meals throughout the week. It makes life so much easier when I can just grab and go as opposed to daily prepping and chopping. This one was perfect and crunchy and oh so fresh. I'm particularly proud of the dressing. The secret ingredient is the chia seeds added to the dressing for extra protein and fiber. So proud of myself for thinking of this idea. Now, on to the recipe.


Ingredients 1 Cabbage

1/2 Red Onion

1/2 cup Pistachios

7 stalks of Brocolini

3 tbsp Olive oil

1/3 cup Olive Juice from jarred olives

1 tsp minced garlic

Sprinkle of fennel seed

1 tbsp Chia Seeds

Black Pepper to taste


Directions

  1. Chop the cabbage and brocolini and place in a large bowl.

  2. Slice red onion thinly and add it to the cabbage.

  3. Chop the pistachios until you end up with smaller kernels of the nut.

  4. Sprinkle the pistachios on top of the salad.


To make the dressing:

  1. In a jar combine, the olive oil, olive juice, minced garlic, black pepper, fennel seeds and chia seeds.

  2. Whisk until everything is combined.

  3. Drizzle generously over the salad.

  4. Toss the salad and enjoy.
