Easy, No Fuss Meals

Hey family! How are you all doing?! I have some recipes for you. These days, meals that don't require a lot of attention or time have been making repeat appearances in my kitchen. With my head stuck in countless research articles, after a long day, sometimes it's nice to have something quick but still delicious. One way that I do this, is by making sheet pan recipes. Basically, you throw everything together on a baking tray, add your seasonings and stick it in the oven. During this time I go back to my desk and get some more work done until the food is ready. A few minutes later, nutritious deliciousness!! I figured you guys could also benefit if I shared these recipes. I mean, let's face it, cooking elaborate meals daily is not feasible. Below are two of my go to recipes.


Surf and Turf Sheet Tray Recipe


Ingredients


1 cup Shrimp

2 Sausages

2 medium Sweet Potatoes or regular Potatoes

1/2 of a large Onion

1 Bell Pepper

1 tbsp Garlic Powder

1/2 tbsp Paprika

1/2 tbsp Salt

Generous sprinkle of black Pepper

1 1/2 tbsp Cajun Seasoning


Prep:

- Wash, peel and cut sweet potatoes into chunks.

- Slice onions and sausage.

- Slice bell peppers into strips.

- Add everything to a bowl including seasonings.

- Use your hands to rub the seasoning evenly onto the potatoes, peppers and shrimp etc.

- Place everything onto a tray and pop it in an oven preheated to 400 degrees Fahrenheit for 30mins.



Sheet tray roasted vegetables and seafood

Ingredients


1/2 of a Delicata Squash

3 Carrots

1 Zucchini

1 Yellow Squash

2-3 Flounder Fillets

2 tbsp Dill

2 1/2 tbsp Garlic Powder

1 tbsp Salt

1 tbsp Pepper

1 tbsp coriander

1 tbsp onion powder

1 tbsp oil

1/2 of a lemon


Prep:

- Wash and slice delicate squash.

- Wash and slice zucchini and Yellow Squash.

- Add oil, 1/2 tbsp salt, 1/2 tbsp pepper, 1 tbsp dill, 1 1/2 tbsp garlic powder and 1/2 tbsp coriander to the vegetables.

- Rub the seasonings into the vegetables to make sure they are evenly coated.

- Season your fillets with 1/2 tbsp coriander, squeeze of a lemon, 1 tbsp onion powder, 1 tbsp garlic powder, 1/2 tbsp salt, 1/2 tbsp black pepper.

- Place vegetables and fish fillets on a sheet tray and place in an oven at 350 degrees Fahrenheit for 15-20mins.


Three ways to use a roasted chicken


Another suggestion I have for making quick meals is to roast a chicken and use it for meals throughout the week. I bought a pre-seasoned lemon rosemary chicken from the grocery store and roasted it for about an hour. Continue below for some meal ideas incorporating roast chicken.



Make a sandwich for lunch...or dinner.


Add your favorite vegetables or whatever vegetables you have on hand. Cut the chicken breast into strips and make a delicious sandwich.















Make pasta.


It took me about 20mins. I boiled some angel hair pasta and made a coconut cream sauce (coconut milk, salt, pepper, garlic powder, spinach and strips of a yellow bell pepper) while the pasta was boiling. Once the pasta was ready, I added it to the cream sauce along with some strips of the chicken and a few blistered tomatoes.



















Cut a portion of the chicken and have it with your favorite sides.


I heated up one leg of the chicken and made some sweet potato fries with a side salad.

Literally, no fuss to cut and season meat and the sides are done in no time. Alternatively, you can purchase an already made chicken. Some markets carry rotisseries, baked chicken etc.


I don't know about you all, but as much as I like doing the most in the kitchen, "easy really does it." Nourishment in half the time! When those quarantine kitchen blues start to hit, grab one of these recipes and call it a day!


If you plan to try out any of these, don't feel restricted to the recipes. Feel free to use the vegetables and seasonings that you have on hand. You can definitely follow the recipe but as always, using them as inspiration is highly encouraged!
