Here is another recipe centered on fish! Today's recipe is all about cod. In some cultures, you'll typically find it preserved in salt (to prolong shelf life). In fact cod is a major part of my culture. It's one of the key players in Jamaica's national dish. It is often salted and cooked with ackee, pepper and onions. Alternatively, you can find cod in your local grocery store. This fish is boasts a nutrient profile of omega 3s, vitamin D, calcium, potassium, iron, B vitamins, magnesium and more. So, switch out your weekly salmon dish for this honey miso cod. Recipe is below.
Ingredients
1/2 lemon
2 1/2 tbsp Miso Paste
1 tbsp Oregano
Fennel seeds (generous sprinkle)
Salt to taste Pepper to taste
1 tbsp Chili oil
2 1/2 tbsp honey
2 Cod Fillets
Directions
Place your cod fillets on a plate and squeeze the juice of half a lemon all over each fillet.
Baste each fillet with miso paste ensuring both sides are completely covered.
Add the oregano, fennel seeds, salt and black pepper. Make sure to rub each of these all over the fish.
Place the seasoned fillet in the fridge for at least 1 hr.
Once fillets are adequately marinated, place a pan on medium heat and add 1 tbsp chili oil along with 1 1/2 tbsp of honey.
Use a cooking spoon to thoroughly combine both ingredients and evenly coat the pot.
Add the fillets and turn the heat to low for an even cook of the fillet.
Flip on the other side after 5 mins.
Add 1/4cup of water to deglaze the pan.
Once the fillet is cooked through, remove from the pan and place on a serving platter.
Add 1/4 cup of water to the pan along with the other tbsp of honey and stir until the liquid is uniform.
Add in a 1/2 tbsp of miso paste and stir. Let this reduce on low heat for 3-5mins.
Pour the sauce over each fillet and garnish with chopped green onion. Serve with your favorite sides and enjoy!
