Roasted Red Pepper Hummus Recipe

Hello Friends, It has been a long hiatus. From grappling with the burnout that comes with being a grad student to juggling adult responsibilities, my creative pursuits had unfortunately fallen to the bottom of my list of to do's. Anyhow, things have slowed down a tiny bit and now that the sun is out again and I have more access to vitamin D, energy levels are recovering and I am back and ready to do what I love most! That is creating fun nutrition content and sharing recipes. I have a bit of a backlog of recipes that I've been making my way through so bare with me and I hope you try each of them out and enjoy! On to today's recipe, a quick and easy roasted red pepper hummus.




Ingredients


1 can chickpeas

3 medium red sweet peppers

2 cloves of garlic

1 1/2 tsp sal

1 1/2 tsp black pepper

1 tbsp lemon Juice

2 1/2 tbsp pinenuts

1 cup extra virgin olive oil

Red Pepper Flakes for garnish


Directions


  1. Drain chickpeas and transfer to a bowl. Rinse with clean water.

  2. Rub clean medium sweet peppers in 1 tbsp olive oil and broil in the oven for 20-30mins.

  3. Add chickpeas, garlic cloves, pinenuts, lemon juice, salt and pepper to a blender.

  4. Add the roasted peppers and olive oil.

  5. Blend until smooth (stop each time and scrape down the sides of the blender to incorporate everything.

  6. Once completely blended, transfer to a storage container.

  7. Sprinkle red pepper flakes on top of the hummus along with a drizzle of olive oil and store in the fridge covered for 1 week.

  8. Serve as a dip with carrot sticks, brocolli, or add to your sandwiches bowls etc.
