Hello Friends, It has been a long hiatus. From grappling with the burnout that comes with being a grad student to juggling adult responsibilities, my creative pursuits had unfortunately fallen to the bottom of my list of to do's. Anyhow, things have slowed down a tiny bit and now that the sun is out again and I have more access to vitamin D, energy levels are recovering and I am back and ready to do what I love most! That is creating fun nutrition content and sharing recipes. I have a bit of a backlog of recipes that I've been making my way through so bare with me and I hope you try each of them out and enjoy! On to today's recipe, a quick and easy roasted red pepper hummus.
Ingredients
1 can chickpeas
3 medium red sweet peppers
2 cloves of garlic
1 1/2 tsp sal
1 1/2 tsp black pepper
1 tbsp lemon Juice
2 1/2 tbsp pinenuts
1 cup extra virgin olive oil
Red Pepper Flakes for garnish
Directions
Drain chickpeas and transfer to a bowl. Rinse with clean water.
Rub clean medium sweet peppers in 1 tbsp olive oil and broil in the oven for 20-30mins.
Add chickpeas, garlic cloves, pinenuts, lemon juice, salt and pepper to a blender.
Add the roasted peppers and olive oil.
Blend until smooth (stop each time and scrape down the sides of the blender to incorporate everything.
Once completely blended, transfer to a storage container.
Sprinkle red pepper flakes on top of the hummus along with a drizzle of olive oil and store in the fridge covered for 1 week.
Serve as a dip with carrot sticks, brocolli, or add to your sandwiches bowls etc.
