Stewed Portabello Mushroom Recipe

Over the weekend I had the urge to play around with mushrooms as a meat substitute and let me tell you, I might never turn back after this. The final product was a juicy flavorful, chewy, succulent goodness and in today's blogpost, I'm gonna share with you how I made it! I mean come on, look at it! Literal perfection in every bite.


Ingredients:


- 2 Medium Portobello Mushrooms

- Salt to taste

- Black Pepper to taste

- 1tsp Cayenne Pepper

- 1 tbsp Steak seasoning

- 3tbsp Worcestershire sauce

- 1 tbsp butter

- Rosemary


Also, a Japanese sweet potato and a few sweet peppers for good measure :)



Note: If you don't have steak seasoning combine onion and garlic powders, paprika, black pepper, ground cloves and salt for your rub.


Instructions:

  1. Rinse the mushrooms and pat dry with a paper towel.

  2. Place the mushrooms in a medium sized bowl and add all the seasonings. Rub them in thoroughly with your fingers. Make sure to get in the crevices.

  3. Add in the Worcestershire sauce and rub it in thoroughly.

  4. Cover the bowl with a damp paper towel and let the mushrooms marinate for 1-2 hours.

  5. In a pan on medium heat add a tbsp of butter and a few sprigs of rosemary or a sprinkle of rosemary if you have it in "seasoning form".

  6. Once the butter is fully melted and you begin to smell the aromas of the rosemary add the

mushrooms and sweet peppers to the pot. Cover and let cook through on one side for about 5mins to start. After that, flip the mushrooms and allow the other side to cook for 5 mins.

7. After cooking on each side reduce the heat and let the mushrooms further cook down until they are soft to the touch.

8. I served mine with a mashed Japanese sweet potato and the stewed sweet peppers. If you would like to pair your mushroom with the sweet potato (I think you should because they complement each other perfectly), boil the potato and mash it with a tbsp of butter and add a sprinkle of cinnamon.


Mushrooms are a very popular meat substitute for our vegan/vegetarian friends and rightfully so because of its quintessential meaty texture and also color! Not to mention it is packed with nutrients! Its rich in minerals such as potassium, calcium, magnesium. It is also rich in B vitamins such as B1, B3 and B5, has vitamin C, a bit of vitamin D, choline, folate and 1 cup of mushrooms can provide ~3mg of protein. So if you're thinking of adding more veggies to your plate, I would definitely recommend trying this one! There are so many ways to play with mushrooms in the kitchen so pick some up at your local grocery store and get cookin!
