Sun-dried Tomato Pesto and Linguine






Hi Friends! It's been too long, but I'm back! I've honestly been so burned out from preparing for my PhD qualifying exam and so my creativity was nowhere to be found lol! Anyway, I passed my exam and I'm now a PhD candidate, yay! I took a short break from the lab and really indulged in self care and got back into some of my favorite hobbies. I feel like I am mostly recovered and I'm actually really looking forward to my fourth year. Anyways, enough about that, I'm resuscitating the blog with a new recipe! very minimal measurements and 100% vibes because who cooks by measuring anyway? I will provide approximations but its totally up to you ;) This sun-dried tomato pesto and linguine will give your tastebuds a hug and you'll definitely go back for more.


Here's what you'll need:


- A jar of sun-dried tomatoes (You can typically find it in the tomato sauce aisle in your grocery store)

- Parmesan Cheese

- Sliced almonds (unsalted)

- garlic

- Salt

- Black Pepper

- Olive Oil

- Water


Directions

  1. Add approximately 3-4 tbsp sun-dried tomatoes to your blender.

  2. Add parmesan cheese, ~1/4 cup almonds, 1/4 cup olive oil, salt and pepper to taste and just enough water to cover everything.

  3. Blend, blend, blend.

  4. In a pot on high heat bring 3-5 cups of water to a boil. When the water begins to bubble, turn the heat down to medium. Add a pinch of salt and your desired amount of linguine. I added a little over a 1/4 of the package.

  5. When the pasta is al dente take a ladle or a big "cooking" spoon to transfer some of the pasta water to the blender with the pesto and blend again.

  6. Drain your pasta and add them back to the pot with the pesto.

  7. Mix until perfectly combined.

  8. Serve it up with a few pieces of sun-dried tomatoes, and a generous sprinkle of basil and parmesan cheese.

  9. Enjoy with your fave beverage.

This yielded 4 servings. If you want to use the entire pack of linguine be sure to scale up the ingredients to match!


The flavor profile is a mix of sweet and savory. The sun-dried tomatoes bring a sort of surprisingly mild fruity sweetness that melds really well with the other savory ingredients. When I made this dish I originally used 2 cloves of garlic but I would add 3-4 next time in addition to some kind of spicy pepper for a kick.
